Icky Bread

Our Brewmaster’s beer bread recipe was born in our Brewmaster’s kitchen. After many attempts to the likes and dislikes of his family, this exquisite creation evolved. Now it is crafted by artisans in our Reno brewery/kitchen. Ichthyosaur India Pale Ale adds welcome depth and complexity while the reuse of the barley left after the brewing process lends strength and fiber. We insist on using local honey to balance the flavors. Enjoy this truly unique and satisfying bread.

Ingredients: Unbleached unbromated bread flour, water, Ichthyosaur IPA, honey, spent barley from our brewery, malt vinegar, sea salt, yeast.

Cinnamon Raisin Bread

Icky bread with a cinnamon twist! A hearty loaf that integrates cinnamon and raisin with our favorite ingredients, Ichthyosaur India Pale Ale and local honey. The outcome is a burst of flavors that no other can match. Best when served warm or as French toast.

Garlicky Bread

Icky bread gets a healthy dose of garlic. This loaf has a distinctive, warm taste and is a great choice for hot sandwiches or pasta. You will keep the arromatic effects with you throughout the day!

Lorenzo Bread

Bread so distinct, you will never be able to forget it! As an experiment, we added jalapeno cheese to Icky bread. Our taste buds were rewarded with sweet and spicy flavors that seemed to contradict and collaborate at the same time. Great for sandwiches.

Rosemary Icky Bread

The addition of rosemary to our Icky bread makes a unique statement with hints of pine, menthol, and pepper. Can be used as bread for sandwiches, with an amplified flavor when hot turkey is between these bread slices.

Seeded Damn Good Loaf

Healthy meets tasty! Not only will this bread give you your daily dose of fiber, but the multiple types of seeds we add make it a health nut’s favorite bread. Healthy never tasted this good.

Ingredients: Unbleached unbromated bread flour, water, Ichthyosaur IPA, honey, spent barley from our brewery, malt vinegar, sea salt, yeast, seeds (sesame, sunflower, pumpkin, poppy, millet, flax, and golden flax).

Icky bread is dried and diced to enhance the flavors of what the cook has already made. It is best as a topping for salad, soup, casserole, and many other options.

Seasoned Icky Bread Crumbs

Dried Icky bread mixed with parsley and dried barley make an ideal bread crumb mix that compliments a homemade meal. It can be used as a topping for casseroles, a thickener for stews or meatloaf, stuffing for poultry, or a crunchy coating for your favorite fried food.

Beer Pancakes

Great Basin Brewing Company invites you to enjoy hearty, nutty, and full-flavored pancakes expertly crafted with Great Basin beer. Beer adds welcome body and malty flavors and aromas. Why should breakfast be boring? This recipe was developed after many trials and attempts to please a discerning wife and picky daughters. My family and friends have been enjoying these pancakes for many years. They have been revered at weekend retreats where we take joy and welcome encouragement to start a new day. The recipe was the winner of The Great Pancake Cookoff held one morning a few years back at a mountain cabin in Northern California; although challenger and brewer Eli Breitberg-Smith, who crafts a mean sourdough pancake, still disputes the results.

Ingredients: Unbleached bread flour (wheat flour and malted barley flour), wheat bran, malted barley extract, rolled oats, dried milk, baking powder, baking soda, salt.
